MARCH

The word 'march' refers to a region in the borderlands; a land area on the border between two territories; a realm's border. Boundaries and frontiers are similar in some ways but have different meanings. These two meanings are critical to our cooking philosophy. When it comes to exploration and discovery, borders are frequently mentioned; they typically signify constraints, but for us, these limits motivate us to look further. The edge effect is an ecological concept that describes how two nearby habitats, such as land/water or forest/grasslands, overlap and produce more biodiversity. These intersections of two or more territories fascinate us greatly. The Mediterranean will be our focus, a collection of marches with endless layers of civilizations, languages, ideas, and abilities. Our research isn't simply about looking at a list of probable components or learning about the history of farming and fishing. MARCH is about delving into the tension and depth that can only be found through a clash of worlds spanning ages, all packed into one area. We want to investigate these marches.
